Method
- Stir the oats, chia seeds and mixed spice in a jar.
- Add the milk, yoghurt, pumpkin purée and maple syrup and mix until smooth.
- Seal and refrigerate overnight.
- Stir in the morning and top with pumpkin seeds and a dusting of cinnamon.
Notes
Roast and mash butternut if you can’t find tinned pumpkin it works just as well.
