Ingredients
  

  • 1/2 cup rolled oats
  • 1 tbsp chia seeds
  • 3/4 cup milk
  • 1/4 cup plain yoghurt
  • 1/3 cup pumpkin purée
  • 1/2 tsp mixed spice
  • 1 tbsp maple syrup

Method
 

  1. Stir the oats, chia seeds and mixed spice in a jar.
  2. Add the milk, yoghurt, pumpkin purée and maple syrup and mix until smooth.
  3. Seal and refrigerate overnight.
  4. Stir in the morning and top with pumpkin seeds and a dusting of cinnamon.

Notes

Roast and mash butternut if you can’t find tinned pumpkin it works just as well.
