Blueberry Muffin Overnight Oats

All the flavour of a warm blueberry muffin vanilla, lemon and bursting blueberries in a five-minute make-ahead jar.

Ingredients
  

  • 1/2 cup rolled oats
  • 1 tbsp chia seeds
  • 3/4 cup milk
  • 1/4 cup plain yoghurt
  • 1/2 cup blueberries fresh or frozen
  • 1 tsp honey
  • 1/2 tsp vanilla extract
  • 1/2 tsp lemon zest

Method
 

  1. Stir the oats, chia seeds and lemon zest together in a jar.
  2. Add the milk, yoghurt, vanilla and honey and mix.
  3. Fold through half the blueberries, seal and refrigerate overnight.
  4. Top with the rest of the blueberries in the morning.

Notes

Frozen blueberries bleed a lovely purple swirl overnight. Add a spoon of ground almonds for a muffin-crumb taste.
