Carrot Cake Overnight Oats
Grated carrot, warm spice and a hint of pineapple give this jar all the cosy flavour of carrot cake with extra fibre built in.
Ingredients
Method
- Stir the oats, chia seeds and cinnamon together in a jar.
- Add the milk, yoghurt and maple syrup and mix well.
- Fold through the grated carrot and sultanas, seal and refrigerate overnight.
- Top with chopped walnuts and a dollop of yoghurt for a cream-cheese-frosting feel.
Notes
The carrot and walnuts add fibre and crunch. A pinch of ground ginger deepens the spice.
