Carrot Cake Overnight Oats

Grated carrot, warm spice and a hint of pineapple give this jar all the cosy flavour of carrot cake with extra fibre built in.

Ingredients
  

  • 1/2 cup rolled oats
  • 1 tbsp chia seeds
  • 3/4 cup milk
  • 1/4 cup plain yoghurt
  • 1/3 cup carrot finely grated
  • 1/2 tsp ground cinnamon
  • 1 tbsp maple syrup
  • 1 tbsp chopped walnuts
  • 1 tbsp sultanas

Method
 

  1. Stir the oats, chia seeds and cinnamon together in a jar.
  2. Add the milk, yoghurt and maple syrup and mix well.
  3. Fold through the grated carrot and sultanas, seal and refrigerate overnight.
  4. Top with chopped walnuts and a dollop of yoghurt for a cream-cheese-frosting feel.

Notes

The carrot and walnuts add fibre and crunch. A pinch of ground ginger deepens the spice.
