Lemon Poppy Seed Overnight Oats

Bright lemon and little pops of poppy seed make this a zesty, refreshing jar to wake up to.

Ingredients
  

  • 1/2 cup rolled oats
  • 1 tbsp chia seeds
  • 3/4 cup milk
  • 1/4 cup plain yoghurt
  • 1 tsp poppy seeds
  • 1 tbsp honey
  • 1 tsp lemon zest
  • 1 tbsp lemon juice

Method
 

  1. Stir the oats, chia seeds, poppy seeds and lemon zest in a jar.
  2. Add the milk, yoghurt, lemon juice and honey and mix well.
  3. Seal and refrigerate overnight.
  4. Stir in the morning and top with a little extra lemon zest.

Notes

Add the lemon juice with the yoghurt so it doesn’t curdle the milk. Blueberries make a lovely topping.
