Mango & Coconut Overnight Oats

A tropical, summery jar sweet mango and creamy coconut over chilled oats. Tastes like a holiday and is ready when you wake up.

Ingredients
  

  • 1/2 cup rolled oats
  • 1 tbsp chia seeds
  • 3/4 cup coconut milk drinking
  • 1/4 cup plain yoghurt
  • 1/2 cup mango diced, fresh or frozen
  • 1 tbsp desiccated coconut

Method
 

  1. Stir the oats, chia seeds and half the desiccated coconut in a jar.
  2. Add the coconut milk and yoghurt and mix well.
  3. Fold through half the mango, seal and refrigerate overnight.
  4. Top with the remaining mango and coconut in the morning.

Notes

Frozen mango works year-round and thaws perfectly overnight. Dairy-free if you use a coconut or plant yoghurt.
