Pineapple & Coconut Summer Overnight Oats
Sweet pineapple and creamy coconut make a piña-colada-inspired jar fully plant-based and tropical.
Ingredients
Method
- Stir the oats, chia seeds and half the desiccated coconut in a jar.
- Add the coconut milk and coconut yoghurt and mix well.
- Fold through half the pineapple, seal and refrigerate overnight.
- Top with the remaining pineapple and coconut in the morning.
Notes
Fully vegan and dairy-free. Tastes like a holiday frozen pineapple works in winter.
