Vegan Coconut & Date Overnight Oats

- Stir the oats, chia seeds and desiccated coconut together in a jar.
- Add the coconut milk, vanilla and most of the chopped dates.
- Mix well, seal and refrigerate overnight so the dates soften and sweeten the oats.
- Top with the reserved dates and an extra sprinkle of coconut before serving.
Notes
No added sugar needed the dates do the work. Use any plant milk you like; oat milk keeps it extra creamy.
