Vegan Coconut & Date Overnight Oats

Naturally sweetened with Medjool dates and made creamy with coconut milk a 100% plant-based jar that feels like dessert for breakfast.

Ingredients
  

  • 1/2 cup rolled oats
  • 1 tbsp chia seeds
  • 3/4 cup coconut milk drinking, not tinned
  • 3 Medjool dates pitted and chopped
  • 1 tbsp desiccated coconut
  • 1/2 tsp vanilla extract

Method
 

  1. Stir the oats, chia seeds and desiccated coconut together in a jar.
  2. Add the coconut milk, vanilla and most of the chopped dates.
  3. Mix well, seal and refrigerate overnight so the dates soften and sweeten the oats.
  4. Top with the reserved dates and an extra sprinkle of coconut before serving.

Notes

No added sugar needed the dates do the work. Use any plant milk you like; oat milk keeps it extra creamy.
