Raspberry Almond Overnight Oats

Tart raspberries and nutty almond come together over a creamy almond-milk base naturally dairy-free.

Ingredients
  

  • 1/2 cup rolled oats
  • 1 tbsp chia seeds
  • 3/4 cup almond milk unsweetened
  • 1/4 cup coconut yoghurt
  • 1/2 cup raspberries fresh or frozen
  • 1 tbsp flaked almonds
  • 1 tsp maple syrup
  • 1/4 tsp almond extract

Method
 

  1. Stir the oats and chia seeds in a jar.
  2. Add the almond milk, coconut yoghurt, almond extract and maple syrup and mix.
  3. Fold through half the raspberries, seal and refrigerate overnight.
  4. Top with the remaining raspberries and flaked almonds.

Notes

Use a plant yoghurt to keep it fully dairy-free and vegan. Frozen raspberries swirl beautifully overnight.
