Peaches & Cream Overnight Oats

Soft, sweet peaches over creamy vanilla oats a sunny, summery jar that uses fresh or tinned fruit.

Ingredients
  

  • 1/2 cup rolled oats
  • 1 tbsp chia seeds
  • 3/4 cup milk
  • 1/4 cup plain yoghurt
  • 1/2 cup peaches diced
  • 1 tsp honey
  • 1/2 tsp vanilla extract

Method
 

  1. Stir the oats and chia seeds together in a jar.
  2. Add the milk, yoghurt, vanilla and honey and mix.
  3. Fold through half the diced peaches, seal and refrigerate overnight.
  4. Top with the remaining peaches and a little extra yoghurt.

Notes

Drain tinned peaches well so the oats stay thick. A pinch of cinnamon is lovely here.
