Gingerbread is the flavour that makes a South African December feel like Christmas — warm ginger, cinnamon and dark treacly sweetness, the smell of a spice tin being opened. This overnight oats jar bottles all of that into a no-bake breakfast you build the night before, so Christmas morning (or any hot December morning) starts with something festive and cold from the fridge, no oven required.
It leans on ingredients already in a South African pantry over the holidays: treacle or brown sugar, ground ginger and mixed spice, a little vanilla. Soaked overnight, the spices bloom right through the oats, and a crushed ginger biscuit on top in the morning brings the crunch of a proper gingerbread man.

Ingredients
1/2 cupJungle Oats rolled oats
1/2 cupMilk of choice
1/4 cupPlain Greek yoghurt
1 tbspTreacle sugar (or dark brown sugar)
1 tbspChia seeds
1/2 tspGround ginger
1/2 tspGround cinnamon
1/4 tspMixed spice
1/2 tspVanilla essence
Topping1 crushed ginger biscuit & a spoon of yoghurt
Method, tonight
1
Add the oats, chia seeds, ground ginger, cinnamon and mixed spice to your jar and give the dry ingredients a quick stir so the spices spread evenly.
2
Pour in the milk, yoghurt, treacle sugar and vanilla. Stir well until the sugar dissolves and there are no dry pockets at the bottom.
3
Seal the jar and refrigerate overnight, or for at least six hours, so the spices soak right through.
4
In the morning, stir and loosen with a splash of milk if needed. Top with a spoon of yoghurt and a crushed ginger biscuit for crunch.
SA kitchen tip
Treacle sugar is what gives this its deep gingerbread colour and flavour — you will find it next to the brown sugar at Pick n Pay and Checkers. No treacle sugar? A teaspoon of golden syrup plus normal brown sugar gets you very close. For the topping, a Bakers Ginger Nut biscuit crushed over the top is the perfect festive crunch.

Why it works
Festive flavour, without the festive food coma.
The genius of a gingerbread overnight oats jar is that it delivers the whole Christmas-morning feeling — warm spice, treacle depth, a biscuit crunch — on a base of wholegrain oats, chia and yoghurt rather than butter, flour and a cup of sugar. You get the flavour of the season with the fibre and protein of a proper breakfast, which is exactly what you want on a morning that usually ends in a long, rich lunch.
Overnight soaking does the real work here. Ground ginger and mixed spice are fat-soluble and time-soluble — give them a night in the fridge and they infuse the whole jar far more evenly than a quick morning stir ever could. By breakfast the oats taste genuinely of gingerbread, not of oats with spice sprinkled on top.
Common questions
Gingerbread overnight oats, answered.
How do you make gingerbread overnight oats?
Stir rolled oats, chia seeds, ground ginger, cinnamon and mixed spice together in a jar, then add milk, Greek yoghurt, treacle sugar and vanilla. Seal and refrigerate overnight, then top with yoghurt and a crushed ginger biscuit in the morning.
Are gingerbread overnight oats healthy?
Yes. Built on oats, chia and yoghurt, a jar carries around 8 grams of fibre and 14 grams of protein for roughly 340 calories, with the festive flavour coming from spices and a single tablespoon of treacle sugar rather than a dessert’s worth of butter and flour.
Can I make gingerbread oats dairy-free or vegan?
Easily. Use oat or almond milk and a plant-based yoghurt, and swap the treacle sugar for the same amount of maple syrup or golden syrup. The spice blend and result stay exactly the same.
Can I prep these for Christmas morning?
They are perfect for it. Make the jars the night before — or batch several for the whole family — and keep the biscuit topping separate so it stays crunchy. See our
overnight oats meal prep guide for scaling up to a crowd.
